meyer lemon tarts

ever since this post, i've been on the lookout for some meyer lemons at the grocery store. last week i found some at trader joe's, and knew immediately what i wanted to make with them. meyer lemon tarts. rather than making one 9-inch tart, i made four little ones using this pan. i think i could have stretched the crust to make another one (or even two) BUT the crust is one of the best parts so i liked it a little thick.

this recipe is great as is, and the tarts are even better with a side of homemade whipped cream and fresh strawberries.
